fix: Remove emojis from F-Droid changelogs and fix EOF delimiter

- Removed emojis (🆕 📚) from F-Droid changelogs (better compatibility)
- Changed EOF to CHANGELOG_EOF in workflow (prevents delimiter conflicts)
